BEST EVER VEGAN SALTED CHOCOLATE CHIP COOKIES
Preheat oven to 350 degrees. Prepare two baking sheets with silpats or parchment paper.
1 cup (2 sticks) Earth Balance Vegan Buttery Sticks, softened
1 cup organic brown sugar
1/2 cup organic granulated sugar
2 tablespoons egg replacer
6 tablespoons water
1 teaspoon vanilla
2 1/2 cups all purpose flour
1 teaspoon salt
1 1/2 teaspoons baking soda
1/2 to full bag of vegan chocolate chips
In a large bowl measure out your brown sugar, add the water and egg replacer and stir until combined. Add the granulated sugar, vanilla and softened buttery sticks and beat well. Add the flour, salt and baking soda and mix until a thick batter forms. Mix in as many chocolate chips as you desire. Drop or roll into balls and bake for 15 to 20 minutes until done. We usually roll them into golf ball sizes.
